Lomi Lomi Salmon

Its counterparts kalua pork and lau lau may not be the healthiest of foods, but at least lomi salmon is mostly tomatoes. That makes it healthy right? That is, if you can avoid the juicy kalua pork sitting next to it on the table.
INGREDIENTS
4-5 tomatoes
1 small sweet onion (Maui onion, Vidalia, etc.)
2 stalks green onion
1/4 cup salt salmon
DIRECTIONS
- Dice up all the ingredients and combine in a large bowl.
- Let the lomi lomi salmon sit in the refrigerator for at least 15 minutes for the flavors to blend.
NOTES
If you are watching your sodium intake cut back on the salt salmon to 1/8 cup. Or you can also use the full 1/4 cup but soak it in water and rinse out the salt before combining it with the other ingredients.

Hey nice recipe. I love Lomi Lomi salmon.
Actually I love pretty much everything to do with Hawaii.
Think I’ll run down to the store and get some fresh salmon for lunch!

I love lomi lomi salmon too. You know once I had it with fresh raw salmon, like small cut up pieces of sashimi. It was so good, it just melted in my mouth!
