		<description>This a great starting point for delicious muffins! A vegan alternative, I made a couple of alterations to the recipe and added some delicious ingredients for a wonderful fall muffin recipe:
No egg, added just under 1/4 cup organic canola oil
Substituted Original Enriched Rice Milk for Milk
Used only 1 banana, added 1 Apple  - I cored and diced the apple, then microwaved the diced pieces for 1 min 20 secs on high. This prevents too much liquid from mutilating the muffins while baking.
Added 1 tsp cinnamon, 1/2 tsp nutmeg and 1/2 tsp cardamom
Used less than a 1/3 cup sugar (if I had brown sugar, I would not have used white sugar at all).
I baked at 375 for about 26 minutes or so.
These came out perfect - moist and so flavorful. Enjoy!</description>

		<description>YUMMY! A word of caution: This recipe does not work well with the little paper mini cups. The muffins taste great, however unable to peel the muffin away from the paper so 1/4 of the muffin is stuck.
