Akamai Lowfat Oat Cake Mix with Flaxseed

Akamai Foods is a local company that has been steadily increasing their number of followers since they began selling their oatcakes at the Kapiolani Community College Farmer’s Market in 2003. I was first introduced to their products when I tried one of their readymade oatcakes at my parents’ house last month. At first glance I thought it would be too health food-ish for me. I was thinking, oatcakes with flaxseed…I guess I’ll try it.
After giving it a few bites, I thought it was pretty good. Very healthy tasting and a substantial snack. On their website it says it’s best to reheat it before eating. Definitely do this is you want a softer more moist texture. My mom had bought several of their products so she sent me home with a bag of their cranberry walnut oatcake mix to try out.

This little bag has been sitting on my counter waiting to be baked for some time. I finally got the urge to make it after talking to my coworker who had bought some of Akamai’s readymade oatcakes from our local Costco. I wanted to see if there was going to be any big difference between the readymade one I had at my mom’s and the dry mix version.
These oatcakes are very, very easy to make at home. All you need to do is add water and 2 tsp oil. No eggs, milk, etc.
1 bag Akamai Cranberry Walnut Oat Cake Mix
1 1/2 cups water
2 tsp oil
1/4 cup semisweet chocolate chips (optional, unless you love chocolate – in that case it’s mandatory)

All you need to do is combine the oatcake mix, water, and oil then let it sit for several minutes. Spoon it out on to a sprayed or greased baking sheet and bake. It’s supposed to make 6 to 8, 4 oz. oatcakes. I didn’t want mine so big so I made 12, 2 oz. oatcakes. These are still quite large, about the size of a medium scone. There are directions on the back of the package to account for making these smaller sized oatcakes. I baked mine at 375 degrees F for 17 minutes and they were perfect.

One other thing, halfway through putting them on the baking sheet I got the idea to add semisweet chocolate chips. So I ended up with 6 regular cranberry walnut oatcakes and 6 cranberry walnut chocolate chip oatcakes. I have to say I loved it with the chocolate chips. I know, defeats the purpose of being healthier…but I don’t care. They were so good! If you like chocolate and don’t care about being super duper healthy you won’t regret it. Plus I figure, it’s better than eating a regular chocolate chip cookie or scone – and it tastes way better!
If you have a choice, I’d say go for the mix version – you can customize it to the size you want, add in additional ingredients, and you can’t beat the taste and texture right out of the oven!
