Balsamic Vinegar Chicken

This recipe for balsamic vinegar chicken is for those that like chicken adobo, salt and vinegar chips, and ponzu sauce. It’s one of my personal favorites, as far as simple chicken recipes go.
INGREDIENTS
4 pieces chicken breast
1/4 cup balsamic vinegar
1 Tbsp Dijon mustard
2 garlic cloves, chopped
1/4 cup fresh lemon juice
1/2 tsp black pepper
DIRECTIONS
Cut the chicken into bite sized pieces. Marinate them in the balsamic vinegar and other ingredients listed above. After 15 to 30 minutes, pour everything into a pot and boil until cooked.

NOTES
On this night I used a Dijon mustard with basil from France and a strawberry infused balsamic vinegar from Modena, Italy. Delicious remnants from a trip two winters ago.

mmm vinegar!
With the balsamic and the lemon juice that’s a lot of tang going on. I grew up on tang, and I don’t mean the powdered orange drink! But now I’m wondering….did you eat this with rice? or pasta? The balsamic is throwing me off and for the life of me I cannot figure out what would go best as a starch.

I had this with a bowl of brown rice. After boiling, the vinegar flavor really mellows.

You can often catch me adding in extra rice to my bowl at the end of the meal to soak up the remaining sauce!
