Corn, Tomato and Basil Salad

Here is a little side dish I had with dinner the other night. No cooking involved, just grab your knife and a cutting board…
INGREDIENTS
1 can corn, drained
1 tomato, diced
1/2 green bell pepper, diced
4 to 6 basil leaves, chopped
Chop up your ingredients, add to the corn, and mix.
As for seasonings, I tried a couple different things. First I tried a little balsamic vinegar…didn’t like that too much. Then I tried a little sweet Thai chili sauce. This was actually pretty good.
Finally I had it plain as a side dish to the pasta. This was good as well. It was very sweet from the corn, refreshing from the tomatoes and bell pepper, and aromatic from the basil. I guess sometimes plain herbs and veggies is the way to go. Of course you would never be able to tell I feel this way by looking at the number of salad dressings in my fridge!

At least you had the patience to turn a can of corn into a salad! We kids would just open the can and start eating right out of it. Hmmm, I still do that…habits are hard to break I guess!

I guess I was feeling ambitious on this evening. Usually I just empty the can of corn into a bowl.
