Soy Miso Chicken

We’ve been eating way too much rice, pasta, and bread lately. Fried rice, rolls, chow mein – the list goes on and on. So for dinner the other night we stuck to white meat chicken over some cucumbers and lettuce.

I didn’t even bother to use dressing hoping to eliminate any extra calories/fat from our meal. Luckily, the chicken had more than enough taste to keep me happy.

All I did was marinate the chicken (10 to 15 min.) in the mixture below and cooked it in a nonstick skillet. I was going to broil it in the oven but it was way too hot that night to be heating up the whole oven for a couple pieces of chicken.

MARINADE
1/4 cup miso paste
3 tablespoons soy sauce
1/4 cup sake
1 tablespoon sugar

I know how you feel…we’ve been on carb overload lately. This meal looks fresh & delicious and very healthy, of course.

Carbs baby! I know the feeling, and it does begin to bog you down when it becomes part of the menu repeatedly. I try to make at least two humungous salad dinners each week. No bread (well maybe a handful of garlic croutons). It makes for a more restful sleep that’s for sure.

A good dish I recommend is Vegetable Ramen, we basiaclly buy Chicken Flavored ramen from the store, then we put it in a bowl with some water (for soup) in it, then we pour the chicken masala packet that came with it, then we put frozen vegetables in it (I usually put green beans, french cut as my favorite), then I microwave it for about 6-7 minutes. Then when the noodles are done, I make it very nice and spicy by adding hot and soy sauce in it for the soup :) Very very hot, spicy, and tasty :D
