Chocolate Chip Biscotti: Sneaking in the Whole Wheat

One of the few ways that I don’t take after my dad is, I am not a coffee drinker. However, my other half does enjoy the occasional cup in the morning. And his request this week was biscotti, either store bought or homemade.
So in an effort to save money, here is my first try at making a slightly healthier version of biscotti. And when I say healthier, it’s basically that I just used 1/2 whole wheat flour and no butter. But as you can see, there are lots of dark chocolate chips! I couldn’t resist.

INGREDIENTS
1 egg
2 Tbsp milk
1 Tbsp oil
1/4 tsp vanilla
1/4 cup sugar
1/2 cup whole wheat flour
1/4 cup all purpose flour
1/4 cup corn meal
1/4 tsp salt
1/2 tsp baking powder
1/3 cup chocolate chips
To begin I mixed the first five ingredients together, then added everything else in and mixed until it came together. Next I sprayed a little of that nonstick baking spray on a nonstick baking sheet and shaped a long, low mound of batter like in the picture above.
I put this in the oven and baked at 350° F for 30 minutes. After that time, I pulled it out of the oven, let it cool for 10 minutes then cut it into the familiar shaped pieces as you can see below.

After that I put it back in the oven to crisp up. It took my batch about 8-10 minutes on each side at 350° F.

I have to say, these turned out much better than I expected. I may just have to snack on some with a cup of hot cocoa!

Biscotti is one thing i never get tired of making! If you’re not a coffee person, they’re also good with tea. Yours look delicious!

There was a time when I simply adored biscotti….and then came the day when I baked hundreds of them each week, which changed the adorable part forever.
Wholewheat is good! We used the mini chocolate chips but my favorite were the ones with macnuts in them, which were then dipped in melted chocolate. What memories!

Yeah, I wanted to add mac nuts inside but couldn’t find any in the cupboard! So sad, I really thought we had some.
