Cranberry Dark Chocolate Bread

My Cranberry Dark Chocolate Bread Odyssey

10:00 am – At home. In a big Tupperware bowl I combined 3 cups all purpose flour, 1 1/2 cups water, 1/3 teaspoon yeast, 1 tablespoon sugar, 1/2 teaspoon salt, 1/2 cup dried cranberries, and 1/2 cup dark chocolate chips.

11:30 am – With container of bread batter in tow, went to play some slack key guitar in Pauoa.

1:00 pm – Hungry. We picked up two plate lunches and headed to the park to eat.

1:45 pm – After Rocky successfully got a snack, we walked around for a bit then headed to my parents’ house.

7:00 pm – Checked on the batter which now looked like this…

7:05 pm – Poured the batter out onto a floured cutting board and with floured hands very lightly kneaded for about 30 seconds. Next I formed it into a ball, put it on a piece of parchment paper and put it back into the same container to rise again.

8:30 pm – Put my Le Creuset pot into the oven to preheat at 375°F.

8:45 pm – Flipped the bread ball into the pot and covered with the lid. Turned the temperature up to 450°.

9:15 pm – Removed the lid from the pot.

9:25 pm – Took the bread and pot out of the oven. Flipped the bread out to cool.

9:45 pm – Enjoyed a late night snack of hot bread!

I was worried that the ride around town was going to give it a hard time with rising. But it seems to turn out fine even if you do this. I would just make sure that the second rise is not done in a moving vehicle.

I really liked the cranberry dark chocolate combo…made it again 2 days later for some friends!
