Blueberry Oat Muffins

Do you love fresh blueberries?

Back in the day (well maybe just like a year ago) I used to use a lot of dried blueberries. It was basically because they were so convenient to keep around. But something has changed, I don’t think I could ever go back to buying those dried up things again.

Seeing something like the container below, nowdays I can’t resist!

Fresh Blueberries

So off they go into these moist oat muffins!

To get started I measured out 1 1/4 cup dry oatmeal into a bowl. I used half traditional and half quick cook, only because I was trying to use up the last of the traditional oats that I had. Normally I’d use all quick cook.

I added 1 cup of skim milk to that and let it soak while I prepared the dry ingredients.

In a bigger bowl I combined:

1/2 cup whole wheat flour
1/2 cup all purpose flour
1/3 cup sugar
1 tsp baking powder

After that was all mixed up I added the wet ingredients:

1 1/4 cup oatmeal and 1 cup skim milk (from above)
1 egg, beaten
1/4 cup vegetable oil
1/2 tsp vanilla extract
1 1/4 cup blueberries

I was worried that the muffins would get stuck so I greased the pan really well with that Pam baking spray. It worked great and they pretty much just popped out of the pan!

These are currently my new favorite muffin! Super moist and a little creamy from the oatmeal – and just bursting with fresh blueberries!!

Mmmmm! Sometimes I freeze fresh blueberries when I can’t use them all. Blueberries freeze really good. The frozen ones can also be eaten in cereal.

Yup, love those fresh blueberries. Any kind of berries actually – blueberries, raspberries, strawberries, blackberries….

Good idea, I do have some frozen ones (bought as frozen). But I never thought to freeze them myself when I have extras!

Right now one of our two young blueberry bushes is buried in snow. I hope it survives! Needless to say, I love the tiny fruit and hope we’ll get at least more than a couple handfuls like we did last year. Heh heh…that is, unless Mister B discovers how good they are and eats them all for himself!

That was so cute hearing about how you taught Rocky to pick up his toys. Mister B….eh, he follows through on the command after I show him a few times, but the next day it seems as if he has no idea what I’m trying to get him to do!

Lori it was such a fun time doing the 24, 24, 24 for Foodbuzz that I think we’ll try to schedule something similiar at least once a month. Foodbuzz or not. I can see why bloggers would want in but I had no idea, really, how fantastic it would be to put everything all together. It feels like you’re part of one big party!

For Rocky, it’s all about the lamb treats! But it was a little easier because he already knew “get your toy”, so it was just a matter of bringing it back to the toy box after.

And I’m glad to hear you’re going to keep up this monthly party. If I’m ever in the Italian lakes district, I’ll have to stop by and we can party! :D

What nice healthy muffins. Since I cannot get good blueberries all year round I keep frozen ones from Trader Joes in my freezer. They are really good in baked goods but there is nothing like fresh.

You muffins look great! I will be doing a little blueberry muffin baking today –my recipe is also a oatmeal/whole wheat flour combo. I have never thought about moistening the oatmeal first, I will have to give that a try.
