Haupia Pancakes

Quick and simple pancakes, great if you run out of milk or have an extra container of yogurt to use up. In this case I had some extra haupia yogurt to use.
These pancakes use both whole wheat and all purpose flour, and have just a slight hint of haupia (coconut) flavor from the yogurt.

INGREDIENTS (Makes about 6 pancakes)
1/2 cup whole wheat flour
1/4 cup all purpose flour
1 tablespoon sugar
1 tsp baking powder
2 eggs
6 oz cup of haupia yogurt
1/4 cup water

If you aren’t watching your sugar and want more of that tropical flavor, definitely have it with some coconut pancake syrup!

Heh heh..haupia yogurt, now why can’t they call it that over here instead of boring coconut? I like how you’ve got wholewheat in there — healthy stuff!
I wonder if pancakes would taste good with anchovies thrown in?
I always put yogurt in my pancakes…they are so fluffy after the addition.
