Matcha Muffins

Match Muffins

The house has never been so clean…probably since we moved in years ago. We’ve been doing a lot of cleaning (and more importantly throwing away) this month.

One good thing that has come out of this is that I’m finding ingredients tucked away in the cupboards that I’ve forgotten about.

Match Muffins

In this recipe I’m trying out some matcha powder that I picked up at Shirokiya a while ago.

Whole Wheat Cornbread Muffins with Strawberries

Whole Wheat Cornbread Muffins

I’ve had some extra strawberries hanging out in the fridge since the time I made the Strawberry Guava Bread Pudding this past weekend. The other day I went to grab one to snack on after work and found that they were frozen! I guess I must have left them on the wrong shelf or right next to the cool air vent.

So the mission yesterday was to come up with a way to use up these last (now frozen) strawberries. I was going to do a guava bread french toast with strawberry sauce…but decided on cornbread muffins instead.

Akamai Lowfat Oat Cake Mix with Flaxseed

Akamai Lowfat Oat Cake with Flaxseed

Akamai Foods is a local company that has been steadily increasing their number of followers since they began selling their oatcakes at the Kapiolani Community College Farmer’s Market in 2003. I was thinking, oatcakes with flaxseed…I guess I’ll try it.

Guava Muffins

Guava Muffin

What a week, I’m so glad the weekend is here! I celebrated as usual - sleeping in then having breakfast. Two things that are non existent during my work week.

If you happen to have access to local Hawaii products such as Meadow Gold Guava Lowfat Yogurt and Hawaiian Sun Guava Nectar - and if more importantly you like whole wheat baked goods, this breakfast recipe is for you.

Banana Walnut Muffins

Banana Walnut Muffins

Just when I thought the rainy season was finished in Hawaii, we had another wet and overcast day today. I actually like it though, it keeps things really cool and green. It will be plenty hot enough in a month or so - a time of year I do not look forward to. During the summer it gets so hot that all I can do is turn on the air con, go on the internet, and plan my next snowy winter vacation.

Whole Wheat Blueberry Pancakes

Whole Wheat Blueberry Pancakes

As most of my friends know, I am not a morning person. I like to stay up pretty late working on the computer, catching up with my favorite blogs, and unwinding from a day of work. After about 11pm, it is so quiet and peaceful … it’s my favorite time of the night.

But the thing is, because of this odd sleeping schedule I am rarely up for an early morning traditional breakfast. What I’ve resorted to is having breakfast type foods for lunch or dinner instead. It works out well though, I get to sleep in and have my pancakes too.
