Chicken Pesto Pasta with Asparagus

The other week I received a gift package in the mail containing a vast array of healthy mixes and sauces. To get a feel for these new products, I decided to try out the classic pesto sauce first.
The pesto mix (and most of the others) are very simple. Basically dried herbs and some spices. I’m sure dishes would taste much better with say pesto made from fresh basil instead of dried, but for someone who gets home tired from work this worked out just fine.

Chicken Yakitori

What is your favorite indulgence? One of mine would have to be eating out at Japanese restaurants. I used to eat out at Japanese restaurants here in Hawaii at least once a week. It was the highlight of my week…my reward for getting through the work week.
Sad to say, lately I’ve been trying to save money and have cut back on eating out. But I figured just because I can’t go out to eat Japanese food, doesn’t mean I still can’t have some of the dishes that I love. I had unagi don the other night, and now tonight I’m doing a recreation of the chicken yakitori from one of my favorite Japanese restaurants.

Thai Chicken Salad

I usually enjoy regular green salad with dressing from the fridge as much as the next person. But once in a while I get really bored with just the green lettuce and same old dressing. Tonight was one of those nights that I just couldn’t bring myself to have a plain salad…again. So, a delicious Thai chicken salad is what I had instead - it was a good choice!

Oven Baked Chicken Dijon

Last year I picked up a little bottle of basil white wine Dijon mustard from a shop in France. Until today, every time I opened my pantry I would see it and think, “I really should make something with that.” Well days turned into weeks that turned into months and now a year later I FINALLY opened up that little jar of Dijon mustard to make this dish.

Chicken long rice can be found at Hawaiian luaus, Japanese okazuyas, and on the dinner table in local households in Hawaii. It’s like a chicken soup without too much broth and using a different type of noodle.
