Easy Healthier Taco Salad

Tonight I just checked out the Taco Bell website. Did you know that it listed the Fiesta Taco Salad as having 840 calories and 45 grams total fat? Yikes! So much for salads as being healthy.

Don’t worry too much. It looks like a big chunk of those numbers come from the shell bowl. The Fiesta Taco Salad without the shell has just 470 calories and 24 grams total fat. So enjoy the taco salad, just don’t eat that shell.

Although I’m sure I’ll still get the Taco Bell Taco Salad every once in a while, I thought it would be better tonight to just make my own at home. Here’s what I came up with…

I’ve been craving stuffed peppers ever since the other week when Kat made some. The only thing is, on this night I didn’t have the right ingredients for her recipe and I was too tired to go grocery shopping after work.

What to do, what to do…I began to dig through the pantry trying to figure out what else could work to stuff inside the peppers. As soon as I saw this box of jambalaya mix, I knew I was set!

Turkey Mushroom Rice

Chicken Mushroom Rice Bowl

The picture above is a dish from Gazen, an izakaya in Honolulu. I don’t remember the specific name of the dish but it’s basically a chicken mushroom rice bowl, similar to fried rice.

This is one of those dishes that is served in a hot stone pot and mixed with a raw egg table side. Using this dish as inspiration, and whatever I had in the fridge, I came up with my own version of this izakaya dish.

Local Style Chili #1

In Hawaii, many people have their own version of local style chili. Do not mistake this dish for chili you find in other parts of the country. This local dish has a very different flavor and texture. In my mind there are several popular variations of local style chili in Hawaii. The two most popular being off shoots from either Zippy’s Restaurant chili or Rainbow Drive-In’s chili.

Whole Wheat Baked Spaghetti

The first time that I tried whole wheat spaghetti at home I could not stand it. It tasted mushy and powdery and … just not very good. I was hesitant to try it again but it was on sale so I gave it another go. I have to say, this time around it was excellent! I almost couldn’t tell the difference between the whole wheat pasta compared to the regular dry pasta. This dish turned out really well, just watch out that you don’t add too much cheese, those calories can come sneaking up on you.
